The Advantage of Slow Growth in Processing Tomatoes

According to a latest published paper by Dr. Diane Barrett and colleagues at the University of California-Davis, processing tomatoes, preferably organic tomatoes, were found to systematically contain total and dissolved solids than conventional tomatoes. Soluble solids are a key quality dimension in grown tomatoes for processing, since the greater the solids percentage, the lesser water that must be eliminated during processing.

The team also reported that organic tomatoes slowly mature, and therefore, the scientists ponder that the greater level of total and dissolved solids may result to somewhat slower growth rate in organic fields.
